Old Salt Founder Cole Mannix and Cooper Hibberd, an Old Salt Co-op member, welcome everyone to the Old Salt Festival in Helmville on June 21. A combination of festival, folk music, food, fire, friendship and farming, the Old Salt Festival promotes sustainability through local agriculture that feeds local people.

Volunteers Laure Antone and Rachel Pierce, both from Helena, serve Offal Good Meatballs, a recipe from Chef Eduardo Garcia and the Old Salt Co-op. Using Mannix beef with ground heart and liver mixed in, each meatball has a nutrition-packed taste, according to the Old Salt Co-op. Alongside are tallow fried potato chips, which are fried in a combination of tallow from the beef that provided the burger and lard from Old Salt processed pork.
