SEELEY LAKE – The community of Seeley Lake came out Sept. 21 for the first annual Seeley Lake Huckleberry Festival in the BBQ Pit and Fat Hippie parking lots. Children enjoyed games and face painting the first Seeley Lake Huckleberry King and Queen were crowned.
Steve Wilson Construction grilled up hot dogs for the event. Juli Wilson said they served 62 hot dogs, just three short of what they brought.
"It was a lot of fun," said Wilson.
The huckleberry cooking/baking contest had 10 entries.
Eric Johnson won for the men for his oatmeal huckleberry cookies. Johnson said he took a regular oatmeal cookie recipe and added huckleberries. He tried a few different ways of serving them to friends before perfecting his entry.
Debby Magstadt took the Queen title with her Huckleberry Coffee Cake, a recipe that was from her daughter-in-laws' grandmother.
"It is just to-die-for," said Magstadt whose recipe is printed below.
Susan Baker won the runner up with her Huckleberry smoothie. This continues to be available at the Grizzly Claw during peak huckleberry season.
Montana Girl's huckleberry fudge won the traveling trophy for the Best Huckleberry Product offered by a local business. Owner Sheila Czifro picked the huckleberries in the Seeley Lake area to ensure the freshest berries for her scratchmade fudge.
"It was a blast," said organizers Michelle Brumfield and Dawn Butler almost in unison.
Brumfield added that she got to hang out with people she hadn't seen much this summer and meet new people and make new friends.
Brumfield said, "I think it was a great first round and we look forward to next year."
Huckleberry Coffee Cake
Mix in medium saucepan: 3/4 cup sugar, 2 1/2 tsp corn starch, 3 cups berries and 2/3 cup of water
Cook on medium heat until syrup is clear of any sugar.
Mix and cream: 1 cup of butter and 1 1/2 cups sugar
Add and cream: 4 eggs, 1 tsp vanilla and 1/2 tsp salt
Mix: 3 cups flour, 1 1/2 tsp baking powder and 1/2 tsp salt
Combine: Sugar and egg mixture. Mix well.
Spread 2/3 of mixture in a 9X13 pan. Pour berry mixture over cake. Spread remaining mixture over berries. It will be very messy. Bake at 350 degrees for 30 minutes. Let cool.
Glaze
Mix: 1 cup powdered sugar and 1 tablespoon melted butter. Add: 2 tablespoons milk
Mix and pour over cake. Enjoy!
