New Salad Bar Great Addition to SSHS Lunch

SEELEY LAKE - Thanks to a generous donation from the Hungry Bear in Condon, the Seeley-Swan High School students and staff now enjoy a full salad bar everyday with their lunch. Head Cook Karla Triepke said it is a perfect way to offer the greens and vegetables grown in the greenhouse, students are eating more vegetables and more staff are utilizing the salad bar for their lunch.

This fall, Triepke was talking with the other teachers and expressed how she would like to get a salad bar for the cafeteria since the space on the line is so limited. A salad bar has a place for the ice and a sneeze guard to keep everything to code. Teacher Shawn Holmes told her that he thought his parents Mike and Sue who own the Hungry Bear Steak House had one that they would be willing to sell to the school. When Holmes went to pick it up, the Hungry Bear donated the table to the high school.

The shop class made a base for it with a shelf and wheels so it can be easily moved in and out of the kitchen.

The new salad bar is filled with fresh greens and vegetables from the greenhouse when they are in season and a homemade salad. There is also a full compliment of vegetables and other salad toppers including pickled beets, olives, cottage cheese, cheese, ham, turkey, roast beef, sunflower seeds, croutons and dressings.

"We try to do the whole full blown salad bar," said Triepke. "There are days when I have to refill the big salad tray. That is really cool."

Triepke said it gets used everyday. Because it is not in the main line, the regular lunch line goes smoother and the students take more time and get more salad.

"It has alleviated a lot of problems on the line since we don't have that much space," said Triepke.

She feels it also offers an opportunity for students to try different salads and vegetables. They try to have a new salad everyday, which can be a challenge to come up with new ideas.

"Some of the kids that never touched [the salad before] are trying it," said Triepke. She added that more teachers and staff have been eating at the salad bar which was one of her goals when she started as the new cook.

"We really appreciate the Hungry Bear thinking of us and donating the bar," said Triepke. "The salad bar has been great."
